Pineapple Casserole

Several of you requested the recipe for the Pineapple Casserole that was part of our Easter Sunday meal. One of the ladies at our church in Georgia shared this one with me, and it became a favorite at our house. Pineapple Casserole 1 20 oz. can pineapple chunks 1/2 C. sugar 3 Tbs. all-purpose flour 1 C. shredded cheddar cheese - - - - - - - - - - - (for topping) 1/2 C. (1 stick) melted butter 1 sleeve of Ritz-type cracker crumbs - - - - - - - - - - - Drain pineapple, reserving 6 Tbs. of the juice. Mix sugar, flour, and reserved juice together. Add the cheese and pineapple and mix until combined. Pour into a greased 1 qt. casserole dish. Combine the melted butter and cracker crumbs. Sprinkle on top of pineapple mixture. Bake at 350 degrees approx. 30 minutes or until the crumbs are nicely browned.

SOUNDS WONDERFUL! I LOVE PINEAPPLE. I EVEN EAT IT ON TACO SALADS AND PIZZA'S!!! YUM.
