A "Cool" Lunch

It's over 100 degrees here today. I don't feel like eating a heavy meal when it's so hot, so I opted for a light lunch--just some fresh fruit from the produce stand. Very refreshing! I also fixed a sweet dip for the fruit. The kids don't care much for it, but I do! :) Easy Fruit Dip 8 oz. cream cheese 1 small jar of marshmellow creme 2 Tbs. vanilla

Mmmmmm . . . that's looks so refreshing! It's "hot" here this week too (I won't tell you how hot, because you'd probably want to hit me), so I'm having to push myself to cook.

And your love pool. Oh, a pool in FL is a must-have which I do not have. But I have woods which bring wonderful shade.

The dip sounds good! I do a really easy dip for fruit, too. I use vanilla yogurt and add honey to taste. It's sweet with a little tart "kick"!

I hope you're taking some time to enjoy your pool on these days when it doesn't rain!

I have my air set to 68....yes as Susan says, it is HOT in our area.....

Yum! That looks soooo good! And I would be dipping with you. ;-)
I know what you mean by hot. Yesterday, my mom came over, and I had chicken salad, and grapes. Then we went out to Chick-Fil-A for Ice Cream. And let the kids play *indoors*. Man, it was VERY hot yesterday!

That fruit plate looks so delicious, and we love the dip here, too. I sometimes grate a little nutmeg on the top before I serve it. It gives it a little different taste.

The fruit looks so yummy! Because our temps are often over 100 degrees throughout the summer, we eat LOTS of fresh fruits--there is just something very refreshing about them. : )
