Peach Nectarine Muffins


I made a batch of muffins for our new neighbors next door. I kept a few for us to enjoy. They were delicious!

Peach Nectartine Muffins

Ingredients
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 large ripe peach- peeled, pitted, and diced
1 very ripe nectarine- peeled, pitted, and diced
1 tbs. brown sugar

Directions
1. Preheat oven to 400 degrees. Grease 8 muffin cups or line with paper liners.

2. In a large bowl, combine flour, sugar, salt, and baking powder. Add vegetable oil, egg, and milk; mix well. Fold in diced peach and nectarine. Fill each muffin tin to the top with the mixture. Sprinkle a dab of brown sugar on top of each muffin tin.

3. Bake for 18 to 20 minutes. Serve warm or cool.
