Yum, enchilada casserole sounds good! Don't you just love going to eat somewhere and only taking part of the meal, so fun!

I love that you have a fish dish on your weekly menu plan. Including fish 2-3 times a week was recommended to us by our dietician. Tilipia is one of my favorite fish to cook with. Great choice.
