Summertime Salad

(Yes, it was delicious!) It's still hot enough where I live to enjoy a refreshing salad for lunch. I'm no Martha Stewart when it comes to presentation, but I had fun making this! Definitely more colorful than PB&J! I used mixed greens topped with cucumber, tomatoe, boiled egg, and a vinegrette dressing; tuna salad; sides of veggies and fruit. I tried some new crackers: Keebler wheat. They taste yummy like a Ritz cracker, but they aren't as crumbly and are lower in fat! http://riverbendramblings.blogspot.com
