Freezer Food

A lady from our church was kind enough to bless us with some bounty from her garden. Grandma helped me freeze 15 quarts of tomatoes and 8 quarts of okra. Whew! My tomatoe-stained fingers were later in the day treated to a manicure (my toesies got a pedicure, too) with a gift certificate from another dear lady. http://riverbendramblings.blogspot.com

Freezer Food

I've never seen anyone freeze tomatoes....how does that work?

Freezing tomatoes is quite easy, just messy. First, boil a large pot of water. Add a few tomatoes to the pot for 30 sec. to 1 min. Remove the tomatoes and place in cold water. The skins just fall right off, so you don't lose chuncks of tomatoe peeling them. Next, slice, quarter, etc. and cool completely. Finally, pack them in freezer bags & label.

This is much simpler than canning or stewing, but you can only use them in recipes as they are all squishy and juicy when thawed. They're great for making soups, stews, and sauces. HTH!
