Chicken Enchiladas
Ingredients 1 can (10 3/4 oz.) condensed cream of chicken soup 1/2 C. sour cream 1 C. salsa or picante sauce 2 tsp. chili powder 2 C. cooked chicken, chopped or shredded 1/2 C. shredded Monterey Jack cheese 6 flour tortillas chopped veggies for garnish (tomato, green onion, green chilies, etc.)

1. Combine the soup, sour cream, salsa, and chili powder in a large bowl and stir. 2. Stir 1 C. of this mixture, the chicken, and the cheese in a separate bowl. 3. Divide the chicken mixture among the tortillas. If you warm the tortillas slightly first, they will be easier to roll. Roll up the tortillas and place seam side up in a baking dish. Pour the remaining salsa mixture over the filled tortillas. Cover the dish with aluminum foil. 4. Bake at 350 degrees for 40 minutes. Top with garnish and serve with your favorite side dish.

He looks harmless, but don't be deceived.
A few days ago Steven spotted this cute little green frog on top of my truck. I, of course, wanted to take a picture of the little guy (or gal). I opened the passenger door, climbed up, stretched my arm out as far as it would go, and snapped a picture. Steven tossed his baseball cap up on the hood in an attempt to gently nudge the frog a tiny bit closer to the camera. Well, the frog decided to take a two feet leap from the center of the hood and landed on my neck! I could feel one leg on my face and the rest of him attached to my neck. I let out a blood-curdling scream, the frog released its death grip, landed with a soft thud on the driveway, and quickly hopped into the nearby bushes. Needless to say, my husband laughed so hard he cried. He probably wouldn't have found the scene quite so funny if I would have toppled from my precarious perch. After I recovered from my fright, I had a good laugh, too. Next time I'll think twice before going in for a close-up. That's what Photoshop is for.

Progress in the kitchen
The new-to-us fridge is in place. The aroma of potato soup from the slow cooker fills the room. A month's worth of coupons have been clipped and filed in my coupon box. I haven't been using as many coupons since I started doing a lot of shopping at Aldi, but I still use enough of them at other stores to make clipping them worth the effort. The leftovers are now headed for the recycling bin.The kitchen is sparking clean now. The question is... will it stay that way through the weekend? :)

This N That
Happy Wednesday! Here's what I've been up to today: ~~Took the dog for an early morning walk. ~~Vacuumed the family room. ~~Cleaned the fridge top to bottom, inside and out. ~~Crammed all the perishable items into a cooler. ~~Watched my hubby load said fridge and haul it away on the back of his truck. ~~Vacuumed and mopped the vacant spot left by the fridge. ~~Signed up for Swagbucks after reading about all the free goodies that Becky has been racking up.
Search & Win
~~Supervised the kids' chore time. ~~Read the newspaper. Right now I'm waiting on my hubby to arrive with a new-to-us fridge. My mom is letting us swap our very used one out with an almost-new one in her rental house. I'm excited about having filtered water again! After I get all of the food back in the fridge I'm going to head into town to pick up some fresh veggies from the weekly farmer's market. What's on your to-do list today?
